Why Our Elderberries?
The Healing Power of Elderberries
American elderberries (Sambucus canadensis) are resilient plants native to North America that have provided medicine to people for millennia. Elderberries have long been known for supporting immune health, reducing inflammation, and providing potent antioxidants that protect the body from oxidative stress. Modern research continues to affirm what traditional healers have long understood: elderberries are a natural ally for wellness, particularly during the cold and flu season.
American Elderberries VS European Elderberries
Despite their deep roots in North America, over 90% of elderberries used in the U.S. today are imported European varieties (Sambucus nigra). We are here to change that trend! Studies show that American elderberries contain higher levels of acylated anthocyanins, powerful plant pigments that not only give the berries their rich purple color but also enhance antioxidant activity and preserve quality after processing. These compounds are associated with improved immune response, cardiovascular health, and overall cellular protection.
Regeneratively Grown in Oregon
At Overstory Farm, we grow American Elderberry in a thriving agroforestry system that mirrors natural ecosystems. Our plants are certified organic by Oregon Tilth, meaning free of synthetic inputs, herbicides and pesticides, and genetically modified organisms. More so, our production systems support the biodiversity — pollinators, plant communities, and soil life. We hand harvest each umbel (cluster of berries) at peak ripeness to preserve flavor and nutrient integrity.
